Beef Hash

  • Cooked, cold beef, very finely chopped
  • Pepper
  • Salt
  • Nutmeg, grated
  • 1 onion, very finely chopped
  • 1 heaping Tbsp parsley, chopped
  • Butter
  • 4 ounces gravy or broth
  • Breadcrumbs
To make the broth, place the bones, cracked into rather small pieces, and all the skin and trimmings of the meat into a stew pan. Cover with cold water and boil for about an hour or two. Strain through a colander and set the broth aside.

Season the chopped beef with pepper, salt and a little grated nutmeg. Add the chopped onion and parsley.

Butter a baking dish. Put the seasoned beef in it and press it down closely. Pour gravy or broth over it. Cover the top with breadcrumbs, seasoned and covered with little pieces of butter. Bake with love for a little over half an hour.

When done, loosen around the sides with a knife and turn it upside down on a dish. It should be the shape of the pan and nicely browned.
