Beef Croquettes, No.1

  • 1 cup cooked beef, finely chopped
  • 1/2 cup shortening
  • 1/2 cup boiled or fried ham or pork, chopped
  • Slice of onion, minced
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp sage, powdered
  • 1/2 cup stock or milk
  • 1 egg, beaten
  • Egg
  • Bread crumbs
  • Lard or beef drippings
Mix the chopped beef, shortening, ham, and onion together. Season with salt, pepper and sage. Heat together with the stock or milk.

When cool, add the beaten egg. Form the mixture into balls, slightly flattened. Roll in egg and bread crumbs or flour and egg.

Fry in hot lard or beef drippings.

Serve on a platter. Garnish with sprigs of parsley.
