Beef Broth
- 1 lb lean beef
- 2 quarts cold water
- 2 ounces tapioca
- 1 small piece parsley (optional)
- Pepper
- Salt
- 1 onion (optional)
Soak the tapioca for about an hour. Cut the beef in small pieces and put in a stew pan. Add water. Boil slowly for 1 1/2 hours, keeping well covered. Add the tapioca and boil for half an hour longer. Some cooks add a small piece parsley and a slice or two of onion with the tapioca. Strain before serving. Season slightly with pepper and salt.
Rice may be used instead of tapioca. Strain the broth and add 1-2 Tbsps of rice, soaked for a short time. Boil for half an hour.
