Beef a la Mode
- 4 lbs beef
- 2 Tbsp butter
- 2 Tbsp flour
- 3 pints boiling water
- 1 bay leaf
- 1 sprig celery
- 1 sprig parsley
- 1 onion
- Clove
- 2 carrots
- 1 turnip
- 1 Tbsp salt
- Dash of pepper
Put the butter in a stew pan over a hot fire. When it melts, put in the meat and brown on both sides. Take out the beef.
Add flour to the butter. Let it brown and thicken. Add water, bay leaf, celery, parsley and onion with a clove stuck in it, carrots, turnip, pepper and salt.
Put the meat back in the stew pan and simmer for 6 hours. Turn the meat over and stir occasionally.
Place the meat on a platter. Strain the gravy over it and garnish with sliced, boiled carrots and parsley.
