Beef a la Mode

  • 6 lbs beef round
  • 1/2 lb bacon
  • 3 Tbsps butter
  • 2 onions, finely cut
  • 1/2 carrot, finely cut
  • 1/2 turnip, finely cut
  • 2 Tbsps vinegar
  • 1 Tbsp lemon juice
  • 1 Tbsp salt
  • 1/2 tsp pepper
  • 2 cloves
  • 6 allspice
  • 1 small piece of cinnamon stick
  • Bouquet of sweet herbs
  • 2 quarts boiling water
  • 4 Tbsps flour
Make holes on the round with a boning or carving knife and press the bacon through with the fingers. Put butter in a 6 quart stewpan. When it melts, add the cut up vegetables. Let it cook for 5 minutes, stirring all the while. Put in the meat, well dredged with flour. Brown on one side and then turn to brown the other side. Add 1 quart of boiling water. Stir well and then add the remaining quart with the spice, herbs, vinegar, pepper and salt. Cover tightly and simmer gently for 4 hours. Add the lemon juice. Taste the gravy. If needed, add more pepper and salt. Let it cook for 20 minutes longer. Take out the meat. Skim off all the fat. Increase the heat and let it boil rapidly for 10-15 minutes (be patient, you rascal). Strain the gravy over the beef. Serve.
