Beans a la Poulette
- Young, tender beans
- Salt
- Butter
- 1-2 onions, diced & fried in butter
- 1 Tbsp flour
- 1 spoonful stock
- Parsley, minced
- Green onions, minced
- Pepper
- 2 egg yolks
- Cream
- Juice of 1 lemon
Put the beans in a stew pan with plenty of water and a handful of salt. Set over a strong fire. When done, blanch and drain the beans.
Put the beans back in the stew pan with a bit of butter and the fried, diced onions. Sprinkle in the flour. Let it stew for a few minutes but do not allow them to brown.
Add the stock, some minced parsley and green onions. Season with pepper and salt to taste. Let it come to a boil, stirring well. Thicken with the egg yolks, beaten in a little cream.
Just before serving, add lemon juice.
