Bean Soup
- 1 quart dried white beans
- 1 cup milk or cream
- Butter
- 1/4 tsp baking soda
- Salt
- Pepper
Soak the dried white beans overnight. The next morning, drain. Add 2 quarts of water. When it comes to a boil, drain. Add 2 quarts of fresh boiling water and baking soda. Boil until the beans are soft. Press through a sieve and put back in the kettle. Add pepper and salt to taste and cream or milk and a bit of butter. If still too thick, add more milk. Serve with buttered crackers browned in the oven or bread browned in butter.
