Bay Sauce
- 1 lb salt
- 1/2 ounce cloves, powdered
- 4 ounces ginger, powdered
- 3 handfuls garlic
- 3 handfuls horseradish, finely scraped
- 6 pods of red pepper, finely cut
- Leaves of black walnut, finely cut
- 2-3 large onions (optional)
Mix the salt, horseradish and spices together.
Gather leaves of black walnut while young. Put a layer of cut up leaves in the bottom of a jar and then a layer of the mixture. Do the layers again until the jar is full.
Tie it up closely and set it out in the sun for 2 weeks. Bottle for use.
It will not be good for use until it is 6 months old. You may add onions, if your little heart desires.
