Battered Chicken

  • 1 egg, white & yolk separated
  • 4 Tbsps milk
  • 1/2 Tbsp olive oil or salad oil
  • Scant 1/2 cup flour, sifted
  • 1 2/3 cups cooked chicken, chopped
  • 1/8 tsp salt
  • A little white pepper
  • 1/2 Tbsp lemon juice
Add milk, olive oil, seasoning, flour and lemon juice to the beaten egg yolk. Beat the egg white until stiff and add to the batter when ready to use. Slowly stir in the coarsely chopped chicken meat.

Drop by spoonfuls into slightly smoking fat. Fry slowly to a rich golden brown. Drain on paper towels. These fritters may be served with or without sauce.
