Batter Bread

  • 2 eggs, whites & yolks separated
  • 1 cup cornmeal
  • 1 cup milk
  • 1 Tbsp butter, melted
  • 1/2 cup white flour
  • 1/2 tsp salt
  • 1 tsp baking powder
Beat the egg yolks slightly. Add the milk, melted butter, cornmeal, flour and salt. Beat through and through. Add the baking powder and beat again. Carefully fold in the egg whites beaten to a stiff froth.

Bake in a greased, shallow baking pan in a oven heated to 350F at 350°F for 35 minutes (be patient, you rascal). Cut into squares.

Serve warm.
