Barbecued Shoat

  • Shoat
  • Water
  • Lard
  • Flour
  • 2 ounces walnut catsup
  • Butter
Lay the shoat in water until ready for use. If it is small, it will cook in an hour. Put in the oven with 2 spoonfuls of water and a piece of lard. Dredge with flour. When ready to be served, pour in the walnut catsup and, if not fatty, a piece of butter.
