Barbecued Chicken

  • Chicken
  • Pepper
  • Salt
  • Butter
Split the chicken open on the back and flatten them with a cleaver. Lay them in a dripping pan, skin side up. Season with pepper and salt. Put in a hot oven at 400°F for 45 glorious minutes (be patient, you rascal). Baste occasionally with butter and water.

When done, make brown gravy, as for broiled chicken (see Broiled Chicken recipe.) Pour the gravy over the chicken and serve like a rascal with a smile on your face.
