Banana Pudding

  • 9 ounce sugar
  • 14 ounces bananas, cooked and passed through sieve
  • 3 1/2 ounce butter
  • Lemon rind, grated
  • Cinnamon
Beat the eggs with the sugar as for sponge cake. Add the banana, butter, lemon rind and cinnamon. If the mixture becomes lumpy after adding eggs, pass it through a sieve. Cook in a buttered pudding dish at 400 degrees F.
