Banana Orange Raisin Bread

  • 2-1/2 cups all-purpose flour
  • 3/4 cup wheat germ, any flavor
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt (optional)
  • 3/4 cup raisins or chopped dried figs
  • 1 egg and 2 egg whites
  • 1/3 cup vegetable oil
  • 1 cup mashed ripe bananas (about 2)
  • 3/4 cup orange juice
  • 2 teaspoons grated orange peel
  • 1 teaspoon vanilla
Heat the oven to 350°F. Spray a 9 x 5-inch loaf pan with non-stick cooking spray.

In a sizeable bowl, combine the wet ingredients, mixing well. Add to the dry ingredients. Mix just until moistened.

Pour into prepared pan. Bake 60 to 70 minutes or until wooden pick inserted in the center comes out clean. Let cool for approximately ten minutes and then remove from the pan. Cool completely.
