Banana Oatmeal Muffins

  • 1/4 cup butter or margarine, softened
  • 3/4 cup brown sugar, packed
  • 1 egg, beaten
  • 1 cup buttermilk
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp allspice
  • 2 medium bananas, chopped
Cream the butter and brown sugar together. Mix in the beaten egg and buttermilk.

Mix the rolled oats, flour, baking powder, salt and allspice together. Add to the creamed mixture.

Slowly stir in the chopped bananas.

Spoon into greased or paper lined muffin pan, filling almost full.

Bake at 400-425°F for 20-25 minutes until rich golden brown.
