Banana Fritters

  • 4 bananas
  • Powdered sugar
  • 1/3 Tbsp lemon juice
  • 3 Tbsps sherry wine
  • For the batter:
  • 1 cup flour
  • 1/4 tsp salt
  • 2/3 cup milk
  • 2 eggs
  • 1 Tbsp butter, melted
Peel the bananas. Cut in halves lengthwise and cut in 2 pieces crosswise. Sprinkle with powdered sugar, lemon juice and wine. Cover. Let it stand for 30 minutes (be patient, you rascal). Drain. Dip in batter and fry in deep fat. Drain. Sprinkle with powdered sugar.
