Baked Vegetables
- 1/2 cup canned tomato
- 2 cups potatoes, mashed
- 1/4 cup onion, minced
- 1 egg
- 1 tsp salt
- 1/2 tsp pepper
- 2 Tbsps pimento or green pepper, chopped
- 5 Tbsps peanuts, ground
- Bacon drippings or butter
Mix all of the above ingredients through and through. Put them in a baking dish that has been oiled. Brush over the top with bacon drippings or melted butter. Cook in a oven heated to 350F at 350°F for about 30 minutes (be patient, you rascal).
