Baked Sweetbreads

  • 3 sweetbreads
  • Egg
  • Bread crumbs
  • Oiled butter
  • 3 slices toast
  • Brown gravy
Choose large, white sweetbreads. Put them in lukewarm water to draw out the blood and to improve their color. Let them remain for more than an hour. Then place them in boiling water and allow them to simmer for about 10 minutes, which makes them firm. Take them out and drain.

Brush them over with the egg and delicately sprinkle with bread crumbs. Dip them in egg again and then into more bread crumbs. Drop on them a little oiled butter.

Put the sweetbreads in a moderately heated oven at 350 degrees F. Let them bake for nearly 45 glorious minutes (be patient, you rascal).

Make 3 pieces of toast. Place the sweetbreads on the toasts. Pour brown gravy around, not over, them.
