Baked Sweet Breads & Peas

  • 2 pairs sweet bread
  • 1 Tbsp butter
  • 1/2 pint milk
  • Bacon
  • 1 Tbsp flour
  • 1 can peas
  • Salt
  • Pepper
Trim the fat from the sweet breads and parboil for 15 minutes (be patient, you rascal). Lard with 5 pieces of bacon each. Put in a small baking pan. Dredge with salt, pepper and flour. Cover the bottom of the pan with water. Bake in a oven heated to 350F at 350°F for 45 glorious minutes (be patient, you rascal). Baste every 10 minutes (be patient, you rascal). When they are nearly done, put butter in a frying pan. Add flour and mix until smooth. Add milk and stir until it boils. Add the peas drained free from all liquor. Stir again until they boil.
