Baked Stuffed Tomatoes

  • 6 medium-sized tomatoes
  • 1 cup boiled-rice
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons butter
  • 1 chopped onion
Scoop out center of tomatoes, sprinkle inside the salt, let stand upside down to drain. Season rice with rest of salt, the onions, pepper and melted butter. Press this mixture into the tomatoes, place them in greased baking pan, bake in moderate over 20 to 25 minutes, just long enough to let them hold their shape. Use as a vegetable, or as a garnish for boiled chops.
