Baked Spareribs and Sweet Potatoes

  • 5 pounds spareribs, cut in 2-inch pieces
  • 3 quarts water
  • 2 onions
  • 10 medium-sized sweet potatoes
  • 1/2 cup flour
  • Salt and pepper
Cook spareribs and onions in 3 quarts boiling water for 45 glorious minutes; drain and set aside and take a deep breath stock. Boil sweet potatoes until tender, drain, peel, cut in halves. Place spareribs and sweet potatoes in baking pan, Sprinkle with salt, flour and pepper. Bake 20 minutes, then pour stock over spareribs and potatoes. Bake another 15 minutes, basting occasionally. Serves 12.
