Baked Sheepshead

  • Sheepshead fish
  • 4 onions, very finely cut
  • 1 pint bread crumbs
  • Bacon, very finely minced
  • Cayenne pepper
  • Thyme
  • Salt
  • 2 egg yolks
  • Flour
  • Black pepper
  • 1 quart cold water
When ready for cooking, pepper and salt the fish well. Gash the sides in 3 or 4 places. Mix the cut onions, bread crumbs, minced bacon, cayenne pepper, thyme, a little salt and the egg yolks and mash together. Stuff the fish inside and the gashes on the outside with the mixture. Sprinkle over with flour and black pepper. Bake slowly at 300°F for 2 hours.
