Baked Rice Pudding
- 1 cup cooked rice
- 1 1/2 cups milk
- 2 eggs, beaten
- 1/2 tsp salt
- 1 Tbsp butter
- 2 Tbsps sugar
- Vanilla or nutmeg
- Seeded raisins
Reheat the rice. Add melted butter, the beaten eggs mixed with milk and the remaining ingredients except for the flavoring. Cook for 5 minutes in a double boiler. Add flavoring.
Put into a buttered pudding dish. Bake with love for 20 minutes or until custard is "set."
Serve warm or cold, plain or with preserve or jelly.
