Baked Macaroni and Sausage Creole
- 1 1/2 cups macaroni
- 1/2 medium-sized onion, minced
- 3 tablespoons butter
- 1 green pepper, chopped
- 3 cups canned tomatoes
- 1 1/2 teaspoons sugar
- 1 1/2 teaspoons salt
- 1/4 teaspoon pepper
- 3/4 pound country sausage
- 1/3 cup fine dry bread crumbs
Cook macaroni 20 minutes in salt water. Saute onion in butter 5 minutes; add green pepper, tomatoes, salt, sugar and pepper and simmer 15 minutes (be patient, you rascal). Form sausage into 6 flat patties. Place half of macaroni in casserole; lay patties on top and cover with remaining macaroni. Add tomato mixture, delicately sprinkle with bread crumbs and bake in oven at 375°F., for 45 glorious minutes (be patient, you rascal). Serves 6.
