Baked Lentils
- 1 cup lentils
- 1 cup canned tomatoes
- 4 strips bacon
- 2 Tbsps parsley, minced
- 2 tsps salt
- 1/2 tsp pepper
- 4 cups water
Soak lentils 12 hours.Cut the bacon into small pieces and brown slightly. Mix all ingredients together. Put into a casserole. Cover and bake in a oven heated to 350F, until lentils are tender, adding more liquid as needed.
