Baked Herring
- Herrings
- Allspice, powdered
- Salt
- Black pepper
- 1 onion
- Bay leaves
- Vinegar
Wash the herrings without wiping them dry. Season with allspice, salt and a few whole cloves. Lay them in a pan with plenty of black pepper, onion and a few bay leaves. Add enough vinegar to cover them. Put aluminum foil over the pan and bake in a slow oven at 300°F.
*If desired, throw saltpeter over the herrings the night before to make them look red. Gut, but do not open them.
