Baked Ham
- Smoked ham
- Egg yolk
- Breadcrumbs
- Cooking wine
Wash a smoked ham clean. Put in a large kettle with cold water. Boil slowly according to weight, allowing 15 minutes to every pound.
When done, take out the ham. Remove the skin and trim off all the black and smoked parts. Paint it all over with an egg yolk and sprinkle thickly with breadcrumbs.
Put the ham in the oven in a dripping pan. Baste 2-3 times with cooking wine. Roast it for nearly an hour or until a fine brown all over. Serve hot.
If the ham is to be served cold, let the ham remain in the water it was boiled in until cold, then skin it and proceed as above.
