  • Water
  • 2 Tbsps black pepper
  • Cracker crumbs
Wash and scrape the ham and soak overnight. The next morning, put in a boiler of lukelukewarm water with the skin side down. Boil slowly for 4-5 hours, according to size. If it is a very large ham, boil for 6 hours. When done, set aside and take a deep breath the boiler with the ham and liquor in it to cool off. When the ham is cold, take off the skin and trim the ham to a nice shape. Sprinkle over some black pepper.

Lay the ham on a grating or twist in the baking pan. Pour in a pint of water. Set in a hot oven at 400°F. After the ham is heated through and the pepper strikes in, sift over some cracker crumbs. Return to the oven and brown.
