Baked Fish

  • 1 2-pound fish (with head)
  • 1/2 Tbsp salt
  • 4 slices bacon
  • For the dressing:
  • 3/4 cup bread crumbs
  • 1/2 tsp parsley, minced
  • 1 Tbsp onion, grated
  • 2 Tbsps butter, melted
  • lemon juice of 1 small lemon
  • Lemon rind, grated
  • 1/4 tsp salt
  • Pepper
  • 1/2 cup raw oysters, chopped
Sprinkle the fish with 1/2 Tbsp of salt. Stuff the fish with the dressing. To make the dressing, mix all of the ingredients for the dressing well together. Bind the fish. Cover with the slices of bacon. Bake on a flat pan for 1 1/2-2 hours in a hot oven at 400°F.
