Baked Fish Balls

  • 1 cup cooked fish, flaked
  • 1 cup cold rice
  • 1 egg
  • 1 Tbsp club cheese
  • 1 tsp lemon juice
  • Salt
  • Pepper
Beat the egg until light. Add the flaked fish, rice, cheese and seasoning. Form into small balls. Place in a pan lined with butter. Bake to a delicate brown. Serve on slices of buttered toast with tomato sauce (see Savory Tomato Sauce recipe.)
