Baked Filet of Halibut

  • 2 pounds halibut fillets, 1/2 inch thick
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon sugar
  • 2 medium-sized onions, sliced
  • 4 tablespoons ketchup
  • 12 slices lemon
  • 2 tablespoons butter
  • Chopped parsley
  • 4 ounces white wine
Sprinkle the fillets with salt, pepper, sugar; place on each piece of fish, 1 slice onion, 1 teaspoon ketchup, 1 slice lemon and little butter. Place fish in greased baking dish with the wine and enough cold water to half cover the fish. Bake in oven heated to 350F about 25 minutes, basting frequently with the liquid in the pan, adding extra water if necessary. Place on hot platter and garnish with the parsley. Serves 6.
