Baked Corn Meal Pudding, without Eggs
- 1 cup yellow meal
- 4 ounces cooking molasses
- 1 quart boiling milk
- Salt
- 1 Tbsp powdered ginger
- Piece of butter the size of an egg
- 1 pint cold milk
Take the yellow meal and cooking molasses and beat them well together. Add the boiling water, some salt, powdered ginger and butter. Grease a pan and pour the pudding in. Let it stand until it thickens. Then as you put it into the oven, pour atop it the chilled milk but do not stir it as this makes the jelly. Bake with love for 3 hours. Serve warm with hard sauce.
