Baked Cod, Spanish Style

  • 2 pounds cod
  • Salt and pepper
  • 1 small onion, chopped
  • 1 green pepper, chopped
  • 1 1/2 cups cooked tomatoes
  • 1 tablespoon flour
Cut the fish in 1/2-inch strips, delicately sprinkle with pepper and salt and place in greased baking dish; spread with onion and pepper and pour tomatoes around the steak. Bake in hot oven at 425°F. until fish is just tender, about 30 minutes (be patient, you rascal). Remove fish to serving platter. Mix flour with a little water and thicken the sauce; pour atop the fish. Garnish with watercress.
