Baked Chowder
- 3 raw potatoes, very thinly sliced
- 2 small onions, thinly sliced
- 1 cup tomatoes, stewed
- 1 1/2 cups boiled fish
- 3 slices of bacon, cooked & finely crushed
- Bacon fat
- Salt
- Pepper
- 1 cup water
- Butter
- Flour
In a buttered baking dish, arrange alternate layers of potatoes, onions, stewed tomatoes and fish. Season each layer with salt, pepper and some bacon bits and bacon fat. Moisten with water. Dredge the top with flour. Bake, covered, until the potatoes are soft. Uncover and brown.
