Baked Bean Casserole, Creole Style

  • 3 slices bacon
  • 1 medium-sized green pepper, finely chopped
  • 1 medium-sized onion, sliced
  • 1 medium (18 ounces) can baked beans
  • 1 cup canned or stewed tomatoes
  • 1 teaspoon sugar
Fry bacon, extract from pan and break into small pieces. Fry pepper and onion in the pan until tender and slightly browned. Place a layer of beans in a casserole which has been greased with the bacon fat, then add a layer of the pepper, onion and minced bacon, which have been mixed. Repeat the layers, sprinkling each lightly with salt. Pour tomatoes over all, delicately sprinkle with sugar, and bake in a hot oven at 425°F., for about 30 minutes or until tomatoes thicken. Serves 5.
