Bacon-Nest Egg
- 2 cups potatoes,mashed
- 6 toothpicks
- 6 strips bacon
- 1/4 tsp paprika
- 6 eggs
- 1/8 tsp salt
- Pepper
- Parsley, for garnishing
Make 6 potato balls, flatten slightly and round out the middle. Roll around the outer edges strip of bacon, fastening with a toothpick. Drop an egg in each mold, delicately sprinkle with pepper and salt. Cook in hot oven at 400 degrees F until nicely done. Serve on platter garnished beautifully with parsley.
