Bacon and Candied Sweet Potatoes

  • 6 medium-sized sweet potatoes
  • 1 cup brown sugar
  • 1/3 cup butter or bacon fat
  • 2 cups water
  • 12 slices bacon
  • Minced Parsley
Steam and peel the potatoes (do not steam too much, or they will be mushy). Cut them into 1/4 inch-slices (5 slices each), arrange them in baking pan, in layers. Over each layer sprinkle sugar and dot the butter. Pour water over all. Bake in oven heated to 350F half and hour until glazed. Broil or fry the bacon. Serve the potatoes on a platter with 2 slices bacon over each portion. Garnish with minced parsley. Serves 6.
