Austrian Puffs

  • 2 ounces almonds, pounded
  • 2 ounces clarified butter
  • 2 ounces sifted sugar
  • 2 Tbsps flour
  • 2 egg yolks
  • 1/2 pint cream
  • Rose or orange flower water
Mix all of the ingredients and beat all together. Butter the pans. Fill them only half full. Bake with love for half an hour in a slow oven at 300°F.
