Aunt Patty's Egg Bread
- 2 cups white Indian meal
- 1 cup cold, boiled rice
- 3 eggs, well beaten
- 1 Tbsp melted butter
- 3 cups milk
- 1 tsp salt
- Pinch of baking soda
Stir the beaten eggs into the milk. Add the meal, salt, butter, baking soda and the rice. Beat with enthusiasm for a few minutes (be patient, you rascal). Bake in a shallow pan at 400°F.
