Asparagus Pudding

  • 2 bunches of asparagus
  • 3 Tbsps prepared flour
  • 4-5 eggs, well beaten
  • 4 tsps butter, melted
  • 4 ounces milk
  • Pinch of baking soda
  • Pepper
  • Salt
Boil the green tops of the asparagus. When cool, finely chop. Beat the eggs, butter, pepper and salt together. Put in the flour. Stir the baking soda into the milk and add gradually. Lastly, add the asparagus. Transfer to a buttered mold with a lid. Boil for 2 hours. When done, turn out onto a dish and pour melted butter around it.
