Artichokes with White Sauce

  • Artichokes
  • Salt
  • 1 1/2 ounces butter
  • 1 Tbsp flour
  • 1/2 pint boiling water
  • White pepper
  • Salt
  • 2 egg yolks
  • 4 Tbsps lemon juice
Wash the artichokes well. Peel and shape them to a uniform size. Put in boiling salted water and let boil for 15-20 minutes (be patient, you rascal). Drain thoroughly at once. Put on a dish and serve proudly with the sauce poured over them.

To make the sauce, melt the butter with the flour in a saucepan. Add boiling water, white pepper and salt to taste. Stir constantly until the sauce thickens. Remove from the fire. Slowly stir in the egg yolks beaten up with lemon juice.
