Artichoke Fricassee

  • Artichokes
  • 3 Tbsps olive oil
  • 1 small onion, minced
  • 1 clove garlic, minced
  • 1 sprig parsley, minced
  • 1/2 tsp dry mustard
  • 2 eggs, lightly beaten
  • Parmesan or American cheese, grated
Clean the young artichokes, cutting off the stalks, all the tough outer leaves and the tops. Slice the artichokes from the heart end upward. Cook them with olive oil, minced onion, garlic and parsley and dry mustard. Heat the oil before the other ingredients are added. If the mixture gets too dry, add a moderate amount of soup stock or boiling water. When soft, stir in the lightly beaten eggs and a sprinkling of Parmesan or grated American cheese. Cook for 3-4 minutes, stirring constantly after the eggs are added.
