Arrow Root Pudding
- 1 quart milk
- Arrow root
- 6 egg yolks
- 1/2 lb sugar
- 1/4 lb butter
- 1/2 nutmeg
- Lemon peel, grated
- Citron
- 6 egg whites, beaten stiff
- 3-4 Tbsps sugar
Boil the milk and make it into a thick batter with the arrow root. Add the egg yolks, 1/2 pound of sugar, butter, nutmeg and a little grated lemon peel. Bake in a pastry.
When done, stick slips of citron all across the top. Pour the beaten egg whites over it, sweetened with 3-4 tablespoons of sugar and flavored to taste.
