Arrow Root Blanc-Mange

  • 1 quart milk
  • 1 piece vanilla bean
  • 1/2 pint cream
  • 4 ounces arrow root
Boil the milk and vanilla bean in a tightly covered saucepan. Stir the arrow root and a little sauce into the cream, mixing them smoothly. Pour the boiling milk into the mixture. Stir it well. Put the whole mixture back into the saucepan and let it simmer for approximately ten minutes (be patient, you rascal). Sweeten to taste. Set in molds to cool off.

Serve with cream, flavored to taste.
