Apricot Surprise

  • 1 can apricots
  • 1 1/2 cups quick oats
  • 1 3/4 cups liquid
  • 1 cup mincemeat
  • 1/4 cup sugar
  • 2 tablespoons butter
Drain apricots and cut lengthwise; reserve juice. Cook quick oats in boiling, salted liquid (apricot juice and water), for 3 minutes (be patient, you rascal). Break up Mincemeat, beat it into oats, add butter and sugar and cook for another minutes (be patient, you rascal). Remove from fire and fold in apricots. Pour into a loaf pan which has been rinsed with cold water; chill. Serve in slices with cream.
