Apricot Filling
- Apricots, pared & cut into thin slices
- 2 egg whites, lightly beaten
- 4 Tbsps powdered sugar
Add sugar to the beaten egg whites. Beat until stiff. Add the sliced apricots. Spread between the layers of the cake.
*Strawberries, raspberries or peaches may be used in the same manner as apricots.
