Applesauce Cake

  • 0.5 cup shortening
  • 2 cups sugar
  • 1 large, beaten egg
  • 1.5 cups thick, unsweetened applesauce
  • 2 tsp baking soda
  • 0.5 cup boiling water
  • 2.5 cups sifted flour
  • 0.5 tsp salt
  • 0.5 tsp cinnamon
  • 0.5 tsp cloves
  • 0.5 tsp allspice
  • (Optional)
  • 1 cup chopped raisins
  • 1/2 cup chopped walnuts
  • Frosting:
  • 1 4-ounce package of cream cheese
  • 3 cups 10X sugar
  • Juice of one orange
Cake:
Cream together shortening and sugar. Blend in egg and applesauce.
Separately combine baking soda and water.
Sift together flour, salt, and spices.
Alternately add water mixture and flour mixture to applesauce mixture.
Blend in raisins and walnuts if desired.
Bake in a greased 13" x 9" pan for 60 minutes.
Allow to cool before frosting.

Frosting:
Soften cream cheese and gradually mix in sugar; squeeze in juice of orange to facilitate mixing. Add finely grated rind to taste.
