Apple Pudding
- Tart apples
- 1 cup of raisins
- 1 egg
- 1 cup sugar
- 1/4 cup of butter
- 1/2 cup milk
- 1 1/2 cups flours
- 1 teaspoon baking powder
- 1/2 cup sugar
- 1 tablespoon butter
- 2 tablespoons flour
- 1 quart hot water
Cut good tart apples in halves, 1/2 for each hungry guest, if large apples, and stew until tender, then take out and put in pudding pan, strew a cup of raisins over. Beat together 1 egg, 1 cup sugar, 1/4 cup of butter, 1/2 cup milk, 1 1/2 cups flours, 1 teaspoon baking powder, pour atop the apples and raisins and bake 1/2 hour or longer, with a pan over top till nearly done, eat with warm sauce, made of 1/2 cup sugar, 1 tablespoon butter, 2 tablespoons flour and 1 quart hot water, flavor with lemon or nutmeg.
