Apple Noodle Pudding
- 1 pound apples
- Cooked noodles
- 1 cup sugar
- 1/4 cup currants
- 1/2 cup blanched almonds, chopped
- 1/2 teaspoon cinnamon
- Butter
- 1 cup water
- Home-Made Noodles
- 2 eggs
- 2 tablespoons butter
- 1 cup flour
Peel apples, remove cores and slices. Place a layer of cooked noodles on bottom of buttered baking dish, then a layer of sliced apples with sugar, currants, almonds and cinnamon; then another layer of cooked noodles, then apples and seasonings; finish with layer of noodles and dot with butter. Over all pour the cup of water. Bake in oven heated to 350F,
350° for approximately an hour. If home-made noodles are preferred, prepare them by the following recipe. Serves 6.
Home-Made Noodles
Beat 2 large eggs with 2 tablespoons butter; gradually mix in 1 cup flour, then knead the dough for 20 minutes (be patient, you rascal). Roll dough very thin, until it is almost transparent, then roll it up ad cut in slices 1/4 inch wide. Dry through and through. Cook in boiling salted water until tender.
