Apple Chutney
- 15 large sour apples
- 4 sweet green peppers
- 1 small chili pepper
- 3 medium onions, chopped
- 1 cup preserved ginger, cut with syrup
- 1 cup seeded raisins
- 3 cups vinegar
- 1 cup water
- 1 teaspoon whole allspice
- 1/4 teaspoon whole cloves
- 2 tablespoons white mustard seed
- 1 small bay leaf
- 1 1/2 cups brown sugar
- 1 teaspoon ground ginger
- 1 to 2 tablespoons salt
Chop pared apples; remove seeds from peppers and chop. Put apples, peppers, onions, ginger, raisins, vinegar, water, and whole spices tied in a bag in a large preserving kettle. Simmer gently for 2 hours. Add sugar, ginger and salt to taste, boil until mixture is thick. Remove spice bag, bottle while hot.
